How to Make Almond Paste

 

If you are in love with baking, almond paste is an ingredient that will come in handy quite frequently. While there are commercially prepared pastes in the market, the best option is to make your own at home and store them either in the refrigerator or freezer for future needs.

 

Ingredients:

  1. 1 cup of blanched almonds or fine almond flour

  2. 1cup of icing sural

  3. 1tsp of almond extracts

  4. 1egg white

  5. 1 tbsp corn syrup (optional)

  6. Pinch of salt

Almond Paste Making Directions

Method 1:

  1. In a food processor grind blanched almonds until finely done. Do not continue for excessive time periods as it may start forming almond butter

  2. Add the confectioner’s/icing sugar and continue blending

  3. Now, bring the egg white, pinch of salt and almond extracts and let the food processor mix them well and form a creamy dough

  4. Finally, add the optional corn syrup and give few seconds to blend in evenly.

 

Method 2:

This is if you are using almond flour. The only aspect to mind is that you add both almond powder and sugar at once to the food processor. Also, shorten the processing time as it might convert to butter with extended blending. Rest of the steps are the same

 

Now you can measure the amount that you need to make your Almond Tea Cookies. Rest of it, you can roll and wrap with a plastic to store either in the fridge or freezer. Note, in the fridge it is good for 5 days as it has raw eggs in it. However, if you will freeze, you can re-use up to 18-20 months for your future needs.
