It’s said that this signature cookie was first introduced around 1920 by Ruth Wakefield at her Toll House Inn, Massachusetts, US. Initially, Ruth created these bad boys by simply adding chocolate chunks to traditional butter cookies recipe and they rapidly became a sweet sensation around the world. So, let’s dig into how to make theses yummy chocolate chip cookies at home or for your gourmet small-town coffee shop.

What you need to gather
Ingredient Amount
Pastry Flour 400g
Butter 200g
(Or butter and shortening
in equal amounts. 100g each.)
Sugar (Granulated) 160g
Brown Sugar 160g
Eggs 2 large
Baking Powder 5g(1tsp)
Chocolate chips (for baking) 400g
Vanilla Flavoring 5g(1tsp)
Nuts of choice 120g
(macadamia, pecans, etc.)
Always use to right amounts and the proportions given above. Depending on the size you want, these amounts will yield 12-24 chocolate chip cookies. When you decide the size, consider the information given about factors affecting cookies’ textures and how they can be incorporated for your needs.
Using the most ideal ingredients is also important. Pastry and Cake flour are your top choices and consider all-purpose as the last while avoid using strong flour. Baking Directions

Step 1
Start mixing butter, sugar, and vanilla extracts using creaming method at a slow speed either with your electric mixer and hand mixing with a suitable spatula. Continue until ingredients are creamed and blended uniformly
Step 2
Sift in flour and baking soda and continue to mix to form a uniform batter
Step 3
Now bring in chocolate chips and nuts and gently mix with either mixer or with the spatula

Step 4
Now, pick around a tablespoonful from the batter place on a prepared baking tray (with greased baking sheet) using the drop method. You can use a cookie or an ice cream scoop as well. Ideally, glaze your cleaned or gloved hands with soft butter and form a ball between hands and drop on to the tray which will give you much uniform and circular chocolate chip cookies
Step 5
For better quality and even spreading, place your dough balls in the refrigerator for good 30 minutes before you start baking
Step 6
Pre-heat your oven to 375o F (190o C) and bake your prepared chocolate chip cookie raw dough biscuits for 8 to 10 minutes depending on the size you formed. Remember to keep a space around 2’’-2 ¼’’ each ball when arranging on the baking tray to prevent overlapping after they spread.
Step 7
Finally, take them out and let them stand to cool down from 30-40 mins before trying to remove from the pan. However, be cautious it can still be hot and would cause burn injury.

How to freeze your dough
If you want to make fresh cookies on a later day, soon as you follow Step 5, take them out of the fridge and place them in a freezer friendly container or bag and transfer to the freezer. If you used the dropping method as mentioned in this recipe, take dough onto your butters hand and make balls as show in the picture above. Freezing your cookie dough allows you to use them fresh within good 2-3 months or even up to 6-8 months if you would pack them with a vacuum sealer. However, I bet there will be very slim chance to store them for that long as it would be almost impossible to resist eating them soon.

Storing your baked chocolate chip cookies

To maintain the soft texture and to prevent drying, wrap them with a plastic and or place them in an air sealed container. On shelf or outside room temperature they will be good for 3 days and 5-6 days in the refrigerator.

Sugar Nut Cookies are a very close friend of chocolate chip cookies. It only varies by using only brown sugar and omitting chocolate chips. You can make them if you love them as I do or simply you are run out of cooking chocolate chips and needs a tasty crunch.
Ingredients
Follow the same Ingredients List and Amounts of Chocolate Chip Cookies and make only these changes

Omit granulated or castor sugar and use only 300g or brown sugar

Remove Chocolate chips and use nuts 400g
