How to Make Butter Icing
Goods you need:
Ingredients Amount
Butter 250g
Icing sugar 600g
Whole Milk (cold) 2tbsp
Vanilla Extract 8ml (1 ½ tsp)
Making of Butter Icing

Step 1
Start mixing softened butter and sift in icing sugar while beating at lower speed using your paddle hook. If you are hand mixing you can use either a whisk or a spatula with smaller flat head. When using the spatula, mix in turning motion while frequently scraping what’s on wall to ensure everything is evenly blended.

Step 2
Now, once a uniform butter-sugar mixture is formed add cold milk and vanilla and mix at low speed until the ingredients are combined well. Make sure not to beat for longer period and at high speeds to prevent becoming fluffy. Because, for cookies, we are looking at a relatively thicker consistency
Step 3
You can adjust your consistency by gradually increasing amount of sugar and milk depending whether you want to thicken or make the icing thinner. However, if you will follow the exact amount above, you will be just fine.
Chocolate Icing Recipe
Chocolate butter icing is another tasty and popular option to fill in between your cookies. Especially, if you are making Chocolate Sandwich Cookies.
Now that you already learned how to make simple butter icing, all you must do is adding 90-100g of cocoa power to your sugar-butter mixture. Make sure that you sift-in your coco as chocolate powder granules will be stubborn to blend in to form the uniformity that we are looking for. Finally, you may adjust the consistency with gradually adding milk as you need. Truly, if you will use the exact amount of the ingredient list, 2tbsp of milk will still give the consistency that we are looking for. OK, now you have made a tasty chocolate butter icing for your sandwich cookies or as a topping for mini cookies. Orange Butter Icing
Once again, the base is same butter icing recipe and ingredients. Also, follow the same steps of the recipe by only modifying the following.

Replace 2bsp of Milk with Fresh or commercially prepared orange juice. If you are using concentrated orange extracts, dilute according to your taste. I am unable to give exact ratios of water and orange as concentrations of commercially made juices varies from one another. However, if you a squeeze in a fresh orange, that would be perfect.

In addition, to give a gourmet touch, shave your orange’s skin finely with a grater and add several pinches of the zest and now you have a mesmerizing Orange Butter Icing to fill your favorite sandwich cookies

Note that you can adjust your consistency of the icing with orange juice and sugar according to your need. However, always remember to follow the basic concepts of making butter icing for cookies.
How to Make Cream cheese frosting
As I mentioned, when making Sandwich Cookies, cream cheese frosting is one of my personal choices. However, I have no evidence to support that it is a common or a popular choice in the field of baking. However, if you love to test new tastes and combinations, you are welcome to try this amazing filling for your cookies. Cream cheese 350g
Icing sugar 650g
Whole Milk (optional) 1-2tsp
Vanilla 1 ½ tsp
Directions:

Step 1
Combine cream cheese and icing sugar at slow speed with a mixer or a spatula. Make sure to sift your sugar before introducing to bowl
Step 2
Add vanilla and continue to mix until combined well
Step 3
You can adjust the consistency of your choice with milk or water as you need. However, for cookies, thick cream cheese filling will make things better and smoother
How to make Lemon or Orange Cream Cheese Icing
Now that you know how to make Cream Cheese Frosting, simply, replace vanilla with orange/lemon juice or extracts. For juice, you can go around 2tbsp or little more along with above measurements of other ingredients in the recipe. Finally, give it a touch of 1tsp of orange/lemon zest to give a signature of taste. Note that your lemons should be of nice yellow color and not greener or over ripen as it can taste bitter otherwise. Now, fill your icing bag and start filling your sandwich butter cookies.
